Why Oh Why is Monk’s So Good?

While entertaining an out-of-town visitor, I decided to take him to Monk’s for dinner last night. We were told that there would be a 20 minute wait. This turned into an hour and a half long wait (is there anytime that this place ISN’T packed?). But guess what? As soon as I had a taste of those frites, my previous stomach gnawing hunger and increasing irritation vanished. And then we ordered our burgers. There isn’t much you can do to make me dislike a burger, but why oh why are they so mouth-meltingly good at Monk’s? Why?

If I could afford (both health-wise and financially) to eat frites and a burger at Monk’s every day, I would.
